A multitude of variations about. You could write all the directories to a file, then grep the logs ones and loop a find, or build up a variable to feed in, or even:

find /opt/sample -type f -name "*.log" -atime +6 -print|grep "\/logs\/"|xargs rm

It depends what logic you think fits best. If you were doing it manually, try to break down each step into very simple tasks and then try to work out the most efficient way to get all the tasks done.

One trip through tree, use mtime, resolution to the second:

sleep 1
find /opt/sample -name '*.log' -type f -newer mark_file 2>/dev/null | grep '/Logs/[^/]*.log$' | xargs -r ls -l > $out
mv -f mark_file_new mark_file
