I think it does.
But your tar does not read from the pipe, it takes the arguments which require a dot.
Without the dot, and without the pipe

Code:

tar -cvf transfer_dmz_start_daily.tar *${Today}*

assuming that Today is a correctly set shell variable.
If you want to use the output from find:

Todayfiles=`find . -ctime -1`
if [ -n "$Todayfiles" ]
then
  tar -cvf transfer_dmz_start_daily.tar $Todayfiles
fi

       virt-tar-out - Pack a virtual machine disk image directory into a tarball.

SYNOPSIS

	virt-tar-out -a disk.img /dir files.tar

	virt-tar-out -d domain /dir files.tar

	virt-tar-out -d domain /dir - | gzip --best > files.tar.gz

DESCRIPTION

       "virt-tar-out" packs a virtual machine disk image directory into a tarball.
