Hi Paul,
Many questions, some answers.
Yes you can very easily set-up a "unix" server as a router without any extra software needed. You do need multiple interfaces of course. Indeed unix is compliant with Gigabit ethernet. It just dependent on the vendor about how to makeuse of it. I know that the SunFire from Sun most of them have a Gigabit OnBoard, and do not need any further configuration.
If you have some more specific questions and a vendor name we should be better to help you.
