Does RHEL not provide a manual page to document the shadow file format? If not, did you search their voluminous online documentation?
I suspect this is something you can easily answer for yourself (if you could simply muster some effort).

I have a server in the office that we connect to via telnet. Can anyone explain please how i can encrypt the password so it cannot be picked up in plain text by sniffing software like WireShark, etc.?

Sphinx is a collection of programs that aim to provide high quality fulltext search. searchd answers search requests coming in on a socket.

OPTIONS
These programs follow the usual GNU command line syntax, with long options starting with two dashes (`-'). A summary of options is

--config Specify an alternate configuration file to use.
--cpustats
Provide per-query CPU stats in searchd log.
--iostats Provide per-query I/O stats in searchd log.
-h --help
Show summary of options.
--pidfile Used with --status and --stop to find the correct searchd.
--status Print status variables of a running searchd.
--stop Send SIGTERM to a running searchd.
