How about using sed to remove the extension and print:

ls | grep tar.gz | sed 's/\.tar\.gz//g'

or simply:

ls *.tar.gz | sed 's/\.tar\.gz//g'

or using parameter substitution:

for file in *.tar.gz; do echo "${file%.tar.gz}"; done
