2. Are there other hardened servers at your place? There should be a standard 'list' that other box installs went through for hardening. There are guidelines for this as well.
But your shop may have deviations form the standard approach. Example: maybe telnet or ftp access is required. Normally these are viewed a weak spot security-wise.

DESCRIPTION
