I agree that there's little you can do about making a 80GB edit more efficient.
The reason your "sed" command did not work is because you used single-quotes around the expression, which prevents the variables from being evaluated:

# echo '$i'
$i
So if you need to reference a variable, you can't use the single-quotes. But if you use double-quotes, you'll need to escape anything that the shell will evaluate but that you need to be literal.
I need to change all Newline caracters (\12) to Fieldseparator(\34).
tr -A '\12' '\34' <file1> file2
Replace all delete (\177) with Newline (\12)
tr -A '\177' '\12' <file2> file3
Put the name of the file first in all rows.

DESCRIPTION escapeshellarg(3) adds single quotes around a string and quotes/escapes any existing single quotes allowing you to pass a string directly
to a shell function and having it be treated as a single safe argument. This function should be used to escape individual arguments to
shell functions coming from user input. The shell functions include exec(3), system(3) and the backtick operator.
On Windows, escapeshellarg(3) instead removes percent signs, replaces double quotes with spaces and adds double quotes around the string.
