As far as what to backup - everything. If you leave something out, that's when you'll need it after a disaster.
Each server/site is different - so there really isn't a list that will cover your site/servers. You have to know what's important. Search for disaster and/or recovery - these questions have been asked before

Ok I'm trying to backup a HD using ufsdump but no matter what I do it rewinds the tape after the dump. Now the tape isn't full (only 285mb) and I still have 6 more partitions I want to put on this tape.

I have to write a backup script to backup say Folder A.
Folder A contains n folders 1,2 ,3 .....n.
my script should copy A without folder 2 & 3.
Is there anyway I can do it without writing individual copy commands????
