I am in need of a easy to read and easy to understand, Unix scripting book.

Can anyone make any recommendations ?

Either then saying Easy to read and understand you may refer to Patience and lots of practise to understand it. Anyway you may try O'riellys Book Variants, its including Scripting and even Unix for beginners and Advance too. Try the book.
