Everything goes well up until:

umount -l /media/mount_point
as in, I see the file system on the desktop, I am able to copy the files, and I see them in the file system when I have finished copying. The problem comes when i unmount the file system, using the latter command, then attempt to mount the create image. Nothing shows up on the mounted image file. What am I doing wrong?

why are you doing a lazy unmount?

It was in the guide I followed, to try create the image.

Well, try not doing a lazy unmount. If you're copying the image file after(or just using it in any way) you really want to do a firm, no-holds-barred, normal unmount. That will definitely sync the contents of the image to file, and if it doesn't, it'll tell you so -- but there's no telling what a lazy unmount might do when.

OK, lets assume that the files are correctly copied onto the mounted filesystem, you have checked and you can see them there. You then dismount the filesystem without using lazy dismount. You then mount this filesystem somewhere else but cannot see the files. Correct?

What are the exact commands you are using to mount the new image filesystem and check for the files? What is the output of df -h also when it is mounted?

well I just mount it using "Archive Mounter". When I run the df -h it shows this:
