One way:
Code:
awk 'BEGIN{print "id gender age phone"}1' table > finaltable

Another approach (assuming a Bourne-type shell where there are no space characters either side of an equals sign when assigning a value to an Environment Variable):

Code:
header="id gender age phone"
# Initialise the file "final table" with a heading line contained in $header
echo "${header}" > finaltable
# Append the contents of the file "table" to the file "finaltable"
cat table >> finaltable
