from a command line how do you view and stop programs that are running, including ones with no open window? (are these called processes?)

Some things may be different with the OS/version you are running (you didn't post what that is - see helpful suggestions in the rules) but one of the following should work in your system:

$ ps -ef
or
$ ps -aux

Read the man page on the kill command to find out how to kill a process - you are obviously new to this so fair warning: Ask someone with more knowledge at your site before killing any processes that are not under your userid. Especially if owned by root.

From the command line

$ uname -a

(To see other options, read the man page for uname)

$ man uname
