Ah yeah, you're defining a list of files as the tarball its filename.
Dunno, something like?

Code:
for FILENAME in xxx yyy zzz
do
    TARBALL=$TSTENV-${FILENAME}.tar.gz
    SRC_FILES="$SOURCE_DIR/$TSTENV-${FILENAME}/"*
    tar acf $TARBALL ${SRC_FILES}
    chmod 644 $TARBALL
    mv $TARBALL ${DEST_DIR}
done

    if [[ "$SRC_FILE" != *.gz ]]; then
      gzip "${SRC_FILE}"
      chmod 644 "${SRC_FILE}.gz"
      mv "${SRC_FILE}.gz" ${DEST_DIR}
    fi
  done
done

Because you cd $SOURCE_DIR you can simply use the filename instead of a $SOURCE_DIR/filename.
Perhaps you want to also move the already gzipped files?
