pattern variable holds PROJTYPE

Looking at .*\<$pattern\>=\([^&]*\)&*.* which is A side of s/A/B/

.* is everything up to pattern, so that would be CTRY=GM&
\<$pattern\> is the pattern, as single word, so is PROJTYPE
= is just the literal character =
[^&]* is zero or more characters not &, so SP here
\( \) group saves the matched SP section, for "play back" later.
&* is zero or more & characters, so & here
.* is everything else on the line, so PROJECTTYPE=Small+Project

-------------------------------------

The line matches the pattern, so the s command runs.
The B side of s/A/B/ is \1.
\1 "plays back" the first saved group.
So SP is the output.

Can't we replace the + sign with space

Pipe whichever solution you choose through tr "+" " "

For example:
