How can I delete all the text starting from <string1> to <string2> in all the .txt files of the folder "FOLDER" ?

Note that the digits between square brackets may be more than one, comprising a comma, or a full-stop; and that they may differ from each other in the different lines.

For your patterns you need to escape (add a leading \ character) to < and > and /
for example:
