What I want to do, since it did not seem to be obvious, is to redirect the output of a whole script from within.

exec > >(tee out.log)
redirects stdout to tee, which then splits it beween stdout...

POSIX redirect file descriptor to subshell
Hello,

The well-known 'bashism' to redirect stdout to a subshell is:
exec > >(tee out.log)
This allows to 'split' stdout, sending a copy to a log file for future reference.

I have not managed...
