You could place the fdisk binary in a non-standard location and have the onpath fdisk be a shell script which calls the fdisk binary and uses awk or whatever to exclude the disk you do not wish to be displayed.

Linux fdisk does not have a configuration file. However, if you know what you are going, you could rebuild the fdisk binary from the Redhat sources and modify it to support a configuration file listing disks to exclude in the output.
