If it's a problem with the ' in a shell script, have you tried escaping them with a \ in front of them? Also, could the numbers of embedded ('s in the script be a problem also? I haven't tried this, but how about:
sql_job () {
sqlplus -s user/user@db1 << END
set head off
set feed off
select to_char(min(create_dt) , 'HH24') from table_name where
trunc(create_dt)=trunc(sysdate-2);
/
END
}
INICIO=`sql_job | awk '{print $1}'`
echo $INICIO
This is just a guess... like I said, I didn't try this script, but this is how I would have tried it...

I have here a script (it works!) to list all scripts in crontab which contains the string "sqlplus":

script - make record of a terminal session
SYNOPSIS
script [-a] [filename]
DESCRIPTION
The script utility makes a record of everything printed on your screen. The record is written to filename. If no file name is given, the
record is saved in the file typescript. See WARNINGS.
The script command forks and creates a sub-shell, according to the value of $SHELL, and records the text from this session. The script ends
when the forked shell exits or when Control-d is typed.
OPTIONS
The following option is supported:
-a Appends the session record to filename, rather than overwriting it.
NOTES
script places everything that appears on the screen in filename, including prompts.
