I want to add a variable for the results from the formula of one variable and results of another var

This is the file name in question OD_Orders_2019-02-19.csv
I am trying to create a bash script to read into files with yesterdays date on the file name while retaining the rest of the files name. I would like for $y to equal, the name of the file with a formula output with the exact date in the middle. So far this is what I have:
To get yesterdays date in the correct format, I made x:
This issue with this is that the results when I do a echo $y gives me this: OD_Orders_date -d yesterday +%Y-%m-%d.csv
Can someone please tell me how I can show the value of $x when echo $y correctly without it showing the formula? I need $y to input the filename with yesterdays date in the correct format because I want to use it more later on within this script.

I try to get the month (of last save) and the filename into a variable, is this possible ?
something like this :
for month in `ls -la | awk '{print $6}'`
do
if ]
then
a=filename of the matching file
cp $a /Sep
fi

I have the results of a grep with -n store in a shell variable
ie
VAR=`grep -n -e 'PATTERN' file`
How ever I am missing the line breaks in the variable , How do I store the resualts of grep with many lines in to a variables. I want the varable should be the sawmway as we do the grep

string px_date2string (resource $pxdoc, int $value, string $format)
DESCRIPTION
Turns a date as it stored in the paradox file into human readable format. Paradox dates are the number of days since 1.1.0000. This func-
tion is just for convenience. It can be easily replaced by some math and the calendar functions as demonstrated in the example below.
PARAMETERS
o $pxdoc
- Resource identifier of the paradox database as returned by px_new(3).
o $value
- Value as stored in paradox database field of type PX_FIELD_DATE.
o $format
- String format similar to the format used by date(3). The placeholders support by this function is a subset of those supported by
date(3) (Y, y, m, n, d, j, L).
RETURN VALUES
Returns TRUE on success or FALSE on failure.
