I wouldn't bother trying to find another Xeon mb. the vast majority of socket 478 and 775 systems will run SCO. as long as any SATA controller can be set to legacy IDE mode you should be fine. Use an add in network card, and preferably a PS2 keyboard.
I believe though that your current issue is with the installation of rs506, caused by a corrupted file in the /etc/conf directories; not corrupted enough to cause the kernel re-link to fail, but enough to prevent the new kernel from booting. Also if you have re-linked the kernel more than once then unix.old no longer represents the system state as it was just before rs506 was installed. ie every time you re-link the kernel, unix is moved to unix.old.
