Not pretty, and I've invoked jq twice:

$ paste -d= <(<<<"$JSON" jq 'keys | .[]') <(<<<"$JSON" jq .[])
"Element1"="file-123456"
"Element2"="Name, of, company written in, a very weird way"
"Element3"="path/to/some/file.txt"

I imagine this will be safe in an eval:

       paste [OPTION]... [FILE]...

       Write  lines  consisting  of  the sequentially corresponding lines from each FILE, separated by TABs, to standard output.  With no FILE, or
