You want to define a variable dir1=something in your prop.txt file ON TOP of the existing dir definition, both pointing to different locations. Then you want to cpdir's contents to an archive directory, and cpdir1's contents to another archive. All this without modifying your above code snippet. Is that correct?
I'm afraid this won't work. You'll need to inform the code that dir1 exists and shoud be used, and, for two actions you'll need two commands (mayhap in a loop, other story).
Please be aware that recursively copying a source directory into an own subdirectory may lead to an infinite loop. Fortunately, this cp is quite clever:

I really didn't want to have to waste people's time and ask this, but after 2 hours and running out of my own time I've decided to ask..
Basically I have a file in the format:
word: other words; more words here; last word

But when I assign a variable to the output of the eval it doesn't work unless I prefix 2 times backslash before $ as shown below.

shtool-mkshadow - GNU shtool create shadow tree using symlinks
SYNOPSIS
shtool mkshadow [-v|--verbose] [-t|--trace] [-a|--all] src-dir dst-dir
DESCRIPTION
This command creates a shadow tree of src-dir under dst-dir by recreating the directory hierarchy of src-dir under dst-dir and by creating
the files of src-dir by linking them into the corresponding directories under dst-dir via symbolic links. When src-dir can be reached via
relative paths from dst-dir, relative symbolic links are used, too. This high-level functionality is originally designed for developers to
create copies of source trees.
OPTIONS
The following command line options are available.
-v, --verbose
Display some processing information.
-t, --trace
Enable the output of the essential shell commands which are executed.
-a, --all
Really shadow all files and directories in src-dir. Default is to skip CVS related files and directories, backup files, object files,
etc.
