You can use printf '\001' and printf '\004' respectively to print the character.
To put it in a variable, you can use var=$(printf '\001\') or var=$(printf '\004\').
In bash you can use var=$'\001' and $'\004'
Otherwise you can enter the hard character by using CTRL-V CTRL-A or CTRL-V CTRL-D
