Which is 'best' depends entirely on what you want to do with it. Often a window manager or distribution will have its own pet media player, web browser, mail program, etc etc bundled with it, which may or may not be sufficient for your purposes.

If you're familiar with VLC, it's available for Linux.

Other common media players include mplayer - its UI isn't the best, but it plays well with the shell, and is sometimes useful as a conversion utility -- and Xine, which has a better UI.

I am looking to buy a PC to have as a dedicated music player, i have 150gb of music now converted and would like something to boot up as quickly as possible and not have any other distractions, Am I in the wrong place? either... MPD - A daemon for playing music SYNOPSIS
mpd [options] [CONF_FILE] DESCRIPTION
MPD is a daemon for playing music. Music is played through the configured audio output(s) (which are generally local, but can be remote). The daemon stores info about all available music, and this info can be easily searched and retrieved. Player control, info retrieval, and playlist management can all be managed remotely. MPD searches for a config file in ~/.mpdconf then /etc/mpd.conf or uses CONF_FILE. Read more about MPD at <http://www.musicpd.org/>. OPTIONS
--help Output a brief help message. --kill Kill the currently running mpd session. The pid_file parameter must be specified in the config file for this to work. --no-daemon Don't detach from console. --stderr Print messages stderr. --verbose Verbose logging. --version Print version information.
