I dont think you understand my point. XML files have a structure that do not necessarily lend themselves to straightforward conversion into CSV files, in which case sed would do the trick. I understand that you are working on a UNIX machine, which means that more than likely you will have access to Perl. Giving you an answer in shell script will merely be a replication of what is in the tried and tested Perl module.
