Are you trying to send mail to some external address or something on your Ubuntu server?
If local, it should just work out of the box without installing anything else (other than a client to actually read the mail that is).
If you want to send to an external address, then it depends on your network; do you have a central mailserver someplace on the local network? If so, just configure your local mailer (might be sendmail?) to use it as it's 'smarthost'.
If you don't have one, the quickest fix would be to configure your local mailer to point at your ISP's smtp server
