Try...
Code:
$ cat filename
"sdfhhs","shfdjhfhfjshfshfsjhf",dsfsafsfs
$ var1=$(cut -d, -f1 filename)
$ var2=$(cut -d, -f2- filename)
$ echo $var1
"sdfhhs"
$ echo $var2
"shfdjhfhfjshfshfsjhf",dsfsafsfs

checkout this.

#! /usr/bin/bash
a=`awk -F "," '{print$1}' ir`
echo $a
b=`awk -F "," '{print$2,$3}' ir`
echo $b

ir is the file name which contains the string

You can do it with shell variable expansion (without external commands):

Code:
$ str='"sdfhhs","shfdjhfhfjshfshfsjhf",dsfsafsfs'

$ str1="${str%%,*}"; echo "$str1"
"sdfhhs"

$ str2="${str#*,}"; echo "$str2"
"shfdjhfhfjshfshfsjhf",dsfsafsfs
