A small variation, using reverse field separators, without sprintf and without FS="" :

Code:
awk '{n=split($2,O,/[^+-]+/); split($2,F,/[+-]/); $2=0; for(i=1; i<n; i++) $2+=(O[i+1] 1)*F[i]}1' FS=\| OFS=\| file
