I've been an Oracle DBA for 13 years and have supported Oracle on AIX, HP-UX, Solaris, and Red Hat. It performs well on all of the platforms. Keeping in mind that database design and how well the SQL and PL/SQL are written play a big part in performance. You can throw all the hardware in the world at a database, but poorly written code with still bring it to its knees.
I think Oracle will run fine on either Sun Solaris or HP-UX. You might consider the fact that Oracle Corp. is about to buy Sun. If you're looking for a less expensive solution, Oracle releases on Red Hat as well.
As for SAN, take a look at EMC and Hitachi. Both work very well. There are probably others, but these are the two I have experience with.
Others might have suggestions as well.
