Your problem comes from the last sed command, because $EXPR contains the character /. The solution consists to use another character than / for the pattern delimiter, § for example.
The two following commands are equivalent.

The problem is that all occurences are displayed, not only the last one.

I want to remove .txt from every file name:
for file in *.txt; des=$(echo $file | sed 's/\.txt//'); mv "$file" "$des"; done
but this gives me:
bash: syntax error near unexpected token `des=$(echo $file | sed 's/\.txt//')'

works, but of course it replaces all vowels.
