Try this:

echo "it's friday"

The > is because you have three ' and they must be matched in pairs. The shell is expecting you to complete the command.

echo 'it\'s friday'
or
echo "it's friday"
or
echo it\'s friday

The shell is trying to match up your quotes, and thinks there is more output. So make sure the shell only tries to interpret one set of quotes at a time.
