For me, it's emacs and vi

I use both emacs and vi, in that order of preference. I've been using both for decades, and I can't imagine getting any work done without either.

1. I use vi (or vim, ex, etc) is great because it has a simple command interface, is very lightweight, and comes standard in just about any unix/linux OS.
2. For doing serious development, regardless of the OS, my go-to editor is emacs. However, for those used to point-and-click editing, emacs has a steep learning curve.
My recommendation is to become extremely proficient in both, so that editing code, config files, data, etc becomes as second nature as breathing.
