Question E-Mail questions

Hi, guys !
I have two questions... and it will be great if someone could give me some clues or a point to start...

1. I have a Linux server (at work) and I'd like to replace it with a FreeBSD. The server is working as a mail server (and a lot of other things) using qmail and vpopmail. I'd like to know what files do I have to copy, so that I keep the same configuration when I install FreeBSD. Of course, I'd like to keep the user data too, if it is possible.

2. There is something else that I don't understand. The hostname of the server is something like mail.domain.com and domain.com is used on another server that is hosting the web page. The mail accounts are like "user@domain.com". How is this done ? I mean, the mail accounts are keeped on mail.domain.com, but the users have @domain.com addresses.
